Make pizza sauce yourself with fresh organic tomatoes

Do you also have certain types of vegetables that you only buy in organic quality? For me, organic tomatoes are a must. Plus everything I need to cook baby food. Of course, I mostly buy other organic foods as well. But, I have to admit, not always.

And what is sold as organic is not always automatically healthier. However, there are certain foods that are simply healthier in organic quality and provide larger amounts of nutrients. There are also foods that are treated with pesticides more often than others and that are more heavily contaminated with pesticides.

According to a study, organic tomatoes are exposed to more stress as they grow. Stress stimulates certain phytochemicals, which should make the tomato healthier.

A pizza without a delicious pizza sauce is not a good pizza. Or?

The sauce shouldn't be too thick or too thin for this. It also takes a little longer to prepare with fresh tomatoes than if you use strained tomatoes. Because fresh tomatoes contain more water and the whole thing needs to be boiled down first. The longer the sauce cooks, the better the taste.

If the pizza sauce is still too thin at the end of the cooking time, you can stir in a little more tomato paste if necessary.

There are certainly differences in taste. Depending on the variety, ripening time and season, the use of fresh tomatoes can vary slightly in taste. I recommend you use ripe, fleshy vine tomatoes.

If you prefer to use tomato puree, use approx. 400-500 ml tomato puree instead of approx. 800 g tomatoes. I always take half the amount or twice as much. I've always got on well with that. It doesn't have to be accurate to the gram either.

When I have the time and inclination, I prefer to cook the pizza sauce fresh and freeze it in portions.

With approx. 800 g tomatoes, the ready-made tomato sauce is sufficient for approx. 6 pizzas. If you make a whole tray right away or if you prefer to use a little more sauce, it will also go away faster.

Tip: After coating the pizza with the sauce, sprinkle some basil or herbs over it.

You can also eat this pizza sauce with pasta.

Recipe for healthy delicious pizza sauce, ideal for freezing and portioning.

  • 800gRispen tomatoes, organic
  • 1pc onion
  • 2 tablespoons of good olive oil, virgin
  • 1pc garlic clove (garlic lovers like more)
  • 2TLO dried regano, or 1-2 handfuls fresh
  • 1/2 teaspoon sugar
  • Salt, pepper, paprika powder noble sweet
  • 1-2pcs bay leaf
  • 1/2 - 1Tube tomato paste (as required)
  1. Cut the tomatoes into very small pieces. Also cut the onion and garlic into small pieces.

  2. Heat olive oil in a saucepan and sauté the onion until translucent. Add the garlic and sauté, but not too long. It shouldn't turn brown!

  3. Deglaze with the tomatoes. Add oregano, 1-2 bay leaves, sugar, paprika powder and season with salt and pepper. Let the whole simmer on a low heat for about 30-45 minutes.

  4. Take out the bay leaves and puree the sauce. Add as much tomato paste until a thick cream is formed. The pizza sauce shouldn't be too runny, but not too thick either.

  5. Season with salt, pepper and paprika powder. Let simmer for another 15-30 minutes.

  6. If you want to use the pizza sauce right away, let it cool down first. You can pour the rest into freezer bags or other suitable containers and freeze.
